Our chefs design balanced menus to provide all the nutrients for good health and create inspiring plant-based dishes.

AYURVEDIC

We pay attention to the principles of Ayurveda as we understand the healing effects of food. This traditional system of medicine is based on studying the unique conditions of each one individually.

Looking to personal attitudes, intolerances, time of the year, and being aware of how to bring Joy and Love to our dishes while avoiding animal products.

SATTVIC

Sattvic diet, usually referred to as a yogic diet, is a diet based on rajasic food that increases the body’s energy. Sattvic diet shares the principle of not causing harm to other living beings and places emphasis on seasonal foods. Adjust meals to each group’s specific work in Monte Velho.- yogic work, meditation, detox, tantra, etc.-  by using ingredients and combinations and working closely with each organizer.

WILD

We work with unprocessed foods, fresh and locally sourced, and we use herbs and vegetable from our own garden in Monte Velho

We challenge ourselves to provide as much as possible from local farmers and homemade food.
